Origin

Mas Olivier cuvée outclasses Faugères appellation not only by its geographical location but also by its reputation. The terroir, facing south on platy mineral layers called “Schistes” soil, benefits from a Mediterranean climate and cool summer nights, ideal for the maturing of grapes.

Grapes

40% old Carignan, 30% Syrah, 30% Grenache from selected plots. Carignan and Syrah are both hand-picked.

Winemaking

It is obtained mostly by carbonic maceration (Syrah, Carignan) and a long fermenting period for the Grenache. Then aged during 6 to 8 months in fine grained French oak barrels.

Food pairings

Grilled T-bone steak beef rib, lamb leg with rosemary, game cooked in sauce, all kinds of cheeses.

Tasting

Attractive robe of a deep red cherry colour. Complex and elegant nose offering black fruits aromas together with coffee and cocoa notes. A fine and soft substance, long and expressive in the mouth.
