The terroir, on platy mineral layers called “Schistes” composed of hilltops rising to 400 meters, is very favourable to the presence of top quality vineyards. It also benefits from a Mediterranean climate with cool nights.
Syrah (hand-picked), Grenache and Mourvèdre, all three of them from selected plots.
The vinification is mostly obtained by carbonic maceration (Syrah) and long fermentation (Grenache, Mourvèdre) in new fine grained barrels made of French oak during 12 months. Then comes another growing in vats.
Roasted beef rib with cepes, game with candied turnips, cheese.
Dark colour with a deep purple hue. Intense nose with ripe black berries notes which reveals after breathing vegetal notes of pepper, incense, cardamom and chili. A well-structured wine with powerful and fine tannins.
